One-pot Savoury Fish Porridge

Not the prettiest, but a very easy Chuck-everything-in-pot nutritious warm meal prep.

Savoury Oats (Fish Porridge)

Servings 4

Ingredients
  

  • 50g dry oats
  • 500g frozen mixed vegetables
  • 1 bag frozen sutchi fish chunks , 500g
  • 1 cube fish stock
  • water

Optional

  • spices & flavours: salt, pepper, light soy sauce, Italian herbs, garlic powder, onion powder, curry powder to taste
  • 300g egg whites
  • 200g riced cauliflower to further increase the volume
  • 3g psyllium husk

Instructions
 

  • Chuck all ingredients in a pot
  • Bring to a boil, stir and simmer until fully cooked

Optional

  • At the end, stir in the eggwhites for additional protein and creaminess
  • Serve with a drizzle of sesame oil, white pepper and spring onions on top
