The Best Mini Chocolate Chip Cookies (31 calories)

Just my attempt at a copycat “Famous Amos”! Crunchy on the outside, soft on the inside. Was very pleased with how these turned out, I think they’ll be my go-to CCC recipe for now ☺️

Ingredients
  

Wet

  • 25 grams light butter
  • 27 grams erythritol (I used 14g brown erythritol & 13g regular erythritol)
  • 5 grams egg, beaten

Dry

  • 28 grams plain flour
  • 10 grams corn starch
  • 1 gram baking powder
  • 1 dash salt
  • 20 grams mini chocolate chips

Instructions
 

Wet ingredients

  • Cream light butter and sweetener together.
  • Add egg and beat until combined.

Dry ingredients

  • Mix all dry ingredients.

Combine and bake!

  • Add dry ingredients to wet.
  • Mix with a spoon until just combined (don’t overmix or your cookies will be tough).
  • Bake in a pre-heated oven at 180°C for 6-8 minutes until lightly browned.
  • Let cool fully before eating.
