The Best Mini Chocolate Chip Cookies (31 calories)
Just my attempt at a copycat “Famous Amos”! Crunchy on the outside, soft on the inside. Was very pleased with how these turned out, I think they’ll be my go-to CCC recipe for now ☺️
31kcal “Famous Amos” Chocolate Chip Cookies
Ingredients
Wet
- 25 grams light butter
- 27 grams erythritol (I used 14g brown erythritol & 13g regular erythritol)
- 5 grams egg, beaten
Dry
- 28 grams plain flour
- 10 grams corn starch
- 1 gram baking powder
- 1 dash salt
- 20 grams mini chocolate chips
Instructions
Wet ingredients
- Cream light butter and sweetener together.
- Add egg and beat until combined.
Dry ingredients
- Mix all dry ingredients.
Combine and bake!
- Add dry ingredients to wet.
- Mix with a spoon until just combined (don’t overmix or your cookies will be tough).
- Bake in a pre-heated oven at 180°C for 6-8 minutes until lightly browned.
- Let cool fully before eating.
