🍊 Sweet-and-Sour (Orange) Chicken

🧄 Ingredients
- 100g chicken breast (or Quorn/tofu)
- 40g onion (frozen diced okay)
- 100g bell peppers
- 20g garlic paste (or fresh garlic)
- 4g ginger paste or fresh ginger
- 18g (1 tbsp) double-concentrated tomato purée
- 5g dark soy sauce
- 5g Shaoxing wine
- 150g diet Fanta Orange (or orange juice)
- ½ stock cube, crumbled
- Optional: ¼ tsp xanthan gum + 1 tbsp water
👩🍳 Instructions
- Heat a non-stick pan over medium heat.
- Sauté chicken, onion, and bell peppers until lightly cooked.
- Add garlic and ginger, stir until fragrant (1–2 mins).
- Add tomato purée, soy sauce, Shaoxing wine, diet Fanta, and stock cube.
- Simmer for 15 minutes until thickened.
- (Optional: Mix xanthan gum with water and add near the end for thickness.)
- Serve with spring onion, sesame seeds, or furikake on top.
- Enjoy over rice or in a lettuce wrap!
