@dietdessertz banana snack cake

The Recipe

Ingredients:

Wet
– 85g banana
– 4g lemon juice
– 30g marigold yogurt
– 35g eggwhite

Dry
– 40g erythritol, 20g brown erythritol
– 60g AP flour
– 30g PEScience cake pop
– baking soda, bp, salt, cinnamon

Steps:

  1. Mix dry.
  2. Mix wet.
  3. Mix dry into wet and combine. Don’t overmix.
  4. Bake at 180°C for 25min, 8×4” loaf pan.

The Review & Pics

Thoughts:

  • Not bad, looked pretty legit.
  • I think be careful not to underbake this one either, because mine came out a bit too gooey (in a raw-batter sense, not in a lava cake sense).
  • I preferred the lemon cake to this.

❇️ Probably won’t make again so soon as there are many more banana bread recipes to try out (and am pretty satisfied with my chocolate banana cake recipe for now), but maybe next time! Overall a solid normie-acceptable slightly healthier alternative to banana bread.

Next time

  • Would play around with the duration of baking.
  • Wonder if we could switch out the flour for more protein 🤔 Might try it with full-PEScience, or some whey/PB2.
