Pandan Chiffon Cake Recipe

213kcal, 16.9g protein total | inspired by @dietdessertz

Ingredients:

  • 140g eggwhites
  • 70g powdered erythritol
  • 70g allulose
  • 34g plain flour
  • 8g potato starch
  • pandan essence, salt

Steps:

  1. Whip eggwhites til stiff peaks.
  2. Sift dry ingredients in and fold it together gently.
  3. Bake at 160°C ~35-40min.
  4. Cool upside down.
  5. Slice and eat!

Gotta try it again sometime to test again. Notes to try out next were:

  • Try less sweetener (50-50g)
  • Add coffee powder or essence
  • Try using a mix of whey & starch to increase the protein? (30-10g)

Trial #2: Higher Protein Salted Caramel Chiffon Cake

[makes 12: 27kcal, 3.6g protein each]

220kcal, 28.8g protein total

Made a higher protein version with less sweetener! (Both flour and whey) Here’s how it turned out 🙂 Tbh I was pleasantly surprised, my dad liked it too. Looked “normal” and I cut a normal sized slice before tallying the calories. Was honestly mind blown at how low-calorie it was for the taste & texture, I still don’t believe it.

160g Eggwhite, 30g Whey, 5-10g Flour, 30g Powdered Erythritol, 20g Allulose, dash of sucralose
