Ingredients
- 60g collagen powder
- 38g flour
- 30g whey powder
- 38g erythritol
- 18g brown sugar erythritol
- 1/2t baking powder
- 1/2t salt
- —
- 1/4 cup eggwhites, ~60g
- 1/4 cup peanut butter, 63g
- 1/8 cup water, 30g
- 1.5t vanilla extract
Instructions
- Mix dry.
- Add wet and mix.
- Bake at 180°C for 20-25 minutes.
- Let cool and slice into 16 pieces.


Review
- Honestly really yummy and looks legit! The browning and crust was A+.
- There was a lot of batter.
- Slightly chewy, feels decadent.
- After letting it set in the fridge overnight, it was even more fudgy and chewy! Not the dense gummy kind, but the decadent kind.
- A bit too sweet so I’ll probably halve the sweetener next time; will also see whether it can do without the ‘brown sugar’ sweetener since that’s generally more expensive and less accessible.
- Curious to try it with different flours next time — I’d probably try oat flour, coconut flour (as she recommended), or whey for even higher protein.
