40-calorie Peanut Butter Collagen Cookies

Ingredients

  • 60g collagen powder
  • 38g flour
  • 30g whey powder
  • 38g erythritol
  • 18g brown sugar erythritol
  • 1/2t baking powder
  • 1/2t salt
  • 1/4 cup eggwhites, ~60g
  • 1/4 cup peanut butter, 63g
  • 1/8 cup water, 30g
  • 1.5t vanilla extract

Instructions

  1. Mix dry.
  2. Add wet and mix.
  3. Bake at 180°C for 20-25 minutes.
  4. Let cool and slice into 16 pieces.

Review

  • Honestly really yummy and looks legit! The browning and crust was A+.
  • There was a lot of batter.
  • Slightly chewy, feels decadent.
  • After letting it set in the fridge overnight, it was even more fudgy and chewy! Not the dense gummy kind, but the decadent kind.
  • A bit too sweet so I’ll probably halve the sweetener next time; will also see whether it can do without the ‘brown sugar’ sweetener since that’s generally more expensive and less accessible.
  • Curious to try it with different flours next time — I’d probably try oat flour, coconut flour (as she recommended), or whey for even higher protein.

✅ Would make again. Super good if you have collagen to use up too (I did).
