@dietdessertz 28kcal chocolate chip cookies (lupin flour)

The Recipe

adapted slightly from @dietdessertz

Ingredients:

  • Dry
    • 10g almond flour
    • 8g lupin flour
    • 7g sugar free vanilla jello pudding powder
    • 20g brown sugar sweetener
    • pinch of salt
    • 3g baking powder
  • Wet
    • 28g light butter (I used margarine)
    • 12g eggwhite
    • 12g mini chocolate chips

Steps:

  1. Mix dry.
  2. Add light butter, eggwhite and chocolate chips.
  3. Bake at 180°C, 8-10min. (Did 8min here)
  4. Cool completely before eating, don’t overbake.

The review

Pros & Cons:

  • ➕ Yum, tastes pretty legit!
  • ➕ Quite easy to make, just a bowl and spoon needed.
  • ➖ Ingredients are more niche than usual.

Notes:

  • Size is around the same as a Famous Amos cookie.
  • Gooey out of the oven, definitely needs to cool a bit before eating.

✅ Verdict: YES would make again.

Future iterations:

  • Try with oat flour
  • Try a mix of light butter and Greek yogurt (update: done on 2 Nov, take#2)
  • Try subbing the lupin for whey-casein
  • Try erythritol instead (take#2)
  • Try hazelnut instead of almond
  • Try a mix of applesauce and light butter

Take #2: Using some Greek yogurt

  • Dry
    • 10g almond flour
    • 8g lupin flour
    • 7g sugar free vanilla jello pudding powder
    • 20g erythritol, 2 squeezes of toffee flavdrops
    • pinch of salt
    • pinch of baking powder
  • Wet
    • 10g margarine
    • 18g Greek yogurt
    • 12g eggwhite
    • 12g mini chocolate chips
